Bluegrass Peaches ~ Kentucky Derby Museum Cookbook
In celebration of National Peach Month our staff has prepared some Peach favorites from our own Kentucky Derby Museum Cookbook. Here's one that will make your mouth water:
BLUEGRASS PEACHES 4 peeled peach halves 4 tablespoons brown sugar 4 slices butter (about 1/2 tablespoon each) 4 tablespoons Kentucky bourbon Vanilla Ice Cream
Treat yourself to the best of the bluegrass, delicious peaches in a rich bourbon sauce. So quick and easy you can perk up your peaches any night of the week. Start by peeling two peaches and removing the pit. Take a sharp blade and cut until you feel the pit, then run the blade around the peach cutting it in half. Then discard the pit. Place the 4 halves on a baking sheet with a lip or a shallow dish.
Scoop 1 Tablespoon of brown sugar and place in the center of each peach bowl. Then carefully pour 1 Tablespoon of your favorite Kentucky bourbon in over the brown sugar and top with a pat of butter.
Pop in the oven at 325 degrees and bake until the sauce is hot and bubbly, about 15-20 minutes. Remove from the oven, carefully slice and serve with Vanilla ice cream.
